Brown Rice with Apples

3 cups cooked brown rice
1 Granny Smith Apple, diced
2 celery stalks, finely chopped
1 red bell pepper, chopped
1/2 bunch green onions, chopped
1/2 cup walnut pieces
1 cup cooked chicken, cubed
3 tablespoons flat leaf parsley, chopped
1/4 cup apple cider vinegar
2 tablespoons lemon juice
3 tablespoons olive oil
Salt and pepper

In a mixing bowl, combine cooked rice with all other ingredients.
Toss mixture lightly. Serve at room temperature or chilled.


Cheddar Apple Skewers

2 tablespoons whole-grain mustard
1 tablespoon maple syrup
4 ounces sharp Cheddar
1/2 large apple
8 wooden skewers

Whisk the maple syrup and mustard in a small bowl.
Cut the Cheddar into 8 cubes about 3/4-inch square.
Core the apple but leave the peel, cut into 8 even pieces.
Thread a piece of apple and a cheese cube onto each skewer.
Serve the cheese skewers with the mustard sauce for dipping.


Fritter Cakes

1 package corn muffin mix
1 egg
2 tablespoons vegetable oil, plus some for frying
3/4 cup milk
1 poblano chile pepper, seeded and very thinly sliced
1 cup frozen corn kernels
1 cup shredded Cheddar
Salt

Combine dry mix with egg, 2 tablespoons oil and milk to make batter then stir in the chile peppers, corn and Cheddar.
Heat a thin layer of vegetable oil in a large skillet and cook 6 small cakes, 3 inches each, at a time for 2 to 3 minutes on the first side and 1 to 2 minutes on the second side, until evenly deep golden in color.
Transfer to a towel lined plate and salt the fritter cakes.
Repeat, adding and heating a little additional oil for the second batch.


Chicken Tremendous

1 c. uncooked rice
1 package. dry onion soup
1 can cream of mushroom soup
1 fryer chicken, cut in serving size
1 can water to dilute chicken soup
Salt & pepper

Season chicken with salt and pepper to taste.
Place rice, dry soup and chicken in a greased casserole in layers.
Dilute cream of mushroom soup and pour over the chicken.
Cover and bake in an oven at 350 degrees for about 1 hour
or until rice is done.
Uncover last 10 minutes to brown.


Chocolate Fondue
 
2 Tbsp. sugar
1 cup heavy cream
8ozs chopped bittersweet chocolate
1 Tbsp. butter
1 Tbsp. cabernet sauvignon
Pound cake cubes for dipping
Strawberries cleaned for dipping
Biscotti bits for dipping

In a microwave-safe bowl, mix the sugar, heavy cream, chocolate and butter together and microwave for 2 minutes.
Take out of microwave and give it a quick whisk.
Add wine and whisk again. Transfer to a fondue pot with a flame underneath.
Serve with pound cake, strawberries and biscotti’s on the side for dipping.




Gooey Chocolate Butter Cake

1 chocolate cake mix
1 egg
1 stick melted butter
Mix these ingredients with mixer until combined…. Press into bottom of a greased 13x9 pan.
Combine the following in separate bowl:
8oz package cream cheese- softened
16 oz package powdered sugar
2 Tbsp cocoa powder
2 eggs
1 stick melted butter
1 tsp vanilla

Whip with mixer until fluffy and add 1 cup of nuts if desired.
Pour cream cheese mixture on top of cake mixture on top of cake mixture.
Bake at 350 for 30-35 minutes.
The center will be gooey. Don’t over bake.
Serve with whipped cream, vanilla ice cream or plain. It’s also good chilled!


Cheeseball

2 packs of cream cheese
Tops of 1 pack of green onions
2 jars of dried beef (shredded, small)
2 tsp Accent
1/4 tsp garlic salt

Mix all together except a little bit of dried beef.
Use to sprinkle on top - serve chilled. Enjoy!


White Trash

4 cups Rice Chex
4 cups Wheat Chex
4 cups Corn Chex
4 cups Cheerios
1 can peanuts
1 can mixed nuts
1 can raisins
1 can of pretzels
1 ½ lbs almond bark

Melt almond bark over double boiler (or 2 minutes in microwave).
Be sure not to over cook.
Stir frequently while melting.
Immediately pour over mix, mixing thoroughly.
Spread out on wax paper. When cool break into smaller pieces.
